Spaghetti squash

Hey guys!

Here is what our dinner involved:

Spaghetti squash! (disclaimer: the following plate is a small one, ha)

Ingredients:

  • 1 spaghetti squash
  • 2 lbs lean ground turkey (this was for dinner and next day’s lunch … I’m all about making extras and my husband eats a lot!)
  • small green pepper
  • small red pepper
  • half of large onion
  • large tomato
  • 1/2 can no salt added diced tomatoes (I prob would have used a whole can but I had a half left over from something else ; )
  • spinach (as desired)
  • pepper
  • sea salt
  • EVOO
  • garlic powder
  • balsamic vinegar
  • red wine vinaigrette

Directions:

  1. Cut squash in half lengthwise, scrape out the seeds and back face down at 350 degrees for 45 minutes.
  2. Near the end of the squash baking,  chop and sauté veggies in a little bit of EVOO, brown ground turkey and add seasonings and vinegars. (Add spinach and  tomatoes near the end).
  3. Take squash out of oven and let cool for few minutes, then using a fork scrape the “spaghetti” out into a medium sized bowl.
  4. Mix together spaghetti and meat mixture, top with cheese if desired, (I used Parmesan) and enjoy!

I really like spaghetti squash! Erik doesn’t care for it as much as me but he still likes it once in awhile. 

What’s your favorite way to eat squash (any kind)?

(I have some butternut squash I need to use soon … any suggestions?)

  1. Yum. I was actually thinking about spaghetti squash earlier, and how I have not had it in SO long. I need to buy some. I know what you mean about making a lot of leftovers, as Nick always amazes me with how much he can eat at dinner.

    Today I purchased an acorn squash and I love to bake it in the oven with butter and, brown sugar. It's perfect and so filling.

  3. I eat my spaghetti squash just like you! In fact I had it two nights ago after bringing home a load of many squash varieties from my mom's garden last weekend...gotta love those bountiful Nebraksa gardens!! :) Tonight I made my ultimate favorite type of squash, Acorn. I cut it in half, take the seeds out and bake it, then spray some olive oil on it and plenty of pepper and dash of salt, then lightly drizzle with pure maple syrup. Delish! I put both halfs on my plate and eat it right out of the shell...hubby thinks I'm weird!

  5. I've only had spaghetti squash once and it was so cool (and delicious haha). I love roasted squash with some olive oil! It makes the house smell so good too.

  10. Leslie - thanks for that recipe. I like spaghetti squash but just never seem to come across any recipes that look good enough but yours looks fabulous! I'm going to try it this weekend.

    As for butternut squash, I love to make it like mashed potatoes. Cut the skin off, cut into chunks, and steam until really soft. Add a little milk, butter, and cinnimon (kids like that) and then mash it with a masher or hand-held mixer until it has the consistency of mashed potatos. Its wonderful!

  11. I haven't tried spaghetti squash yet, but I really ought to...It looks so interesting! Oh, and for your butternut squash...Why not chop it up, roast it with some brussle sprouts with a drizzle of olive oil and balsamic vinegar, and serve it with crispy bacon and blue cheese?

  13. The spaghetti squash with turkey & peppers looks very yummy! I haven't had this squash yet, but looking forward to trying soon. With butternut squash, I always make my special autumn soup - we actually had it today. I probably should post a recipe actually :)

  14. Mmmm, wow, your spaghetti squash is so beautiful! Such a perfectly balanced, healthful, delicious meal!

    Zach and I are the same way - I adore squash, he only really wants it once in a while... :-) I definitely fix spaghetti squash most frequently, since I can fix any sort of "pasta" recipe with it, and Zach is always psyched about pasta style dishes! :-) Ohhh, I so adore butternut squash, though... My favorite way to fix it is to simply bake the halves with a drizzle of olive oil and a generous sprinkling of rosemary!

  19. This looks like a great way to have spaghetti squash! I usually have mine with a marinara. I love butternut and often make it into soup. I also like to stir cooked butternut into risotto and add parm cheese. Both are great!
