Cheesecake, anyone?

This may or may not seem like quite the random post but since I’ve been “away” from blog land the past few days, I thought I’d pop in to say HAPPY WEEKEND and HI!

Here a a few random pictures of recent:

First of … a light, and healthy cheesecake (with virtually zero fat in it, I might add) from Clean Eating Magazine (though I changed it just a little).  Picture 385

I topped it with 84% cacao dark chocolate and sliced almonds.

And here’s my big, old friend Bubba, aka Bubby.  I love this guy!Picture 392

Any big plans for the long weekend???

Erik and I are just glad to have a three day weekend, ha, it hasn’t happened for us in awhile and we plan to fully enjoy it! : )

    I am drooling right now. That cheesecake looks outstanding! :)

    Ever since I found out we are headed to the Cheesecake Factory this weekend, I have been craving cheesecake ever since. I will most definitely be enjoying some cheesecake, but not anywhere near as healthy as yours is.

    OMGosh, I can't believe my eyes. I'm picking up an Eating Clean mag tomorrow to learn some yummy dessert recipes. I'm not a baker but I'm about to try it out!

    That cheesecake looks awesome. I never liked cheesecake until I tried the blueberry white chocolate kind at Cheesecake Factory. While I have not had that in a LONG time (or anything at cheesecake factory- I'm boycotting them until they provide healthier options on their menu), I might have to try that recipe and make my own blueberry version.

    That cheesecake looks so scrumptious I would swear it was from the Cheesecake Factory, not Clean Eating! Wowza. I need to get my hands on that recipe.
