How was your St. Patrick's Day? Hopefully good. I've never really gotten into St. Patty's Day for some reason. And I don't like to toot my own horn, but probably because the day after St. Patty's Day is my birthday!!!! So, I usually have just done all my celebrating the day after! ;)
Though this year since it falls on a Wednesday and we help with youth group on Wednesday nights, we're going to do something for my birthday this weekend... therefore, I'll talk about birthday things more later on in the week.Last night we had spaghetti squash for the first time and we really liked it! I cooked some chicken breasts in a large skillet with 1/2 cup brewed green tea (tip: tea is a great substitution for vegetable/chicken broths), some kale, 1 tbsp minced garlic, little garlic & herb seasoning, and a pinch of red pepper seasoning. After putting the chicken/kale mixture onto the cooked spaghetti squash, I sprinkled it with Parmesan cheese and a little red wine vinaigrette. Yum!
Since it was so nice outside, after dinner and making our lunches/snacks for work today, we went outside and walked around and tossed a football to each other. Here's my husband posing like a dork with our Wal-Mart glow-in-the-dark football, haha.
And now I'm off to do some weights, enjoy this nice weather and maaaybe make some birthday treats ; )

ReplyDeleteI love spaghetti squash and use it as the base for a lot of meals. One of my favorite ways to eat it is with spaghetti sauce and a Laughing Cow triangle with a veggie burger on top! So yummy!

ReplyDeleteSpaghetti squash ROCKS! I'm actually not the biggest fan of plain ol' pasta so s.squash is the perfect substitue. I think it has so much flavor and adds so much to the dish.

I love spaghetti squash! It is really good with just cheese and diced tomatoes. Yum. It looks like you had a great day! Yeah!!! I just love these sporadic warm days. They are so appreciated mixed in with the chill!
