Cinnamon & nutmeg jelly donut bites

Hope everyone had a great weekend!

Ours wasn't too exciting, but still nothing to complain about, that’s for sure. We went to a movie on Friday night, I spent some time working on Saturday morning and the most important food-related highlight was these:

What are they you ask? (Or even if you don’t ask, ha).

I’ve been seeing delicious looking baked donuts on blogs lately and I’m sure I’m not the only one who doesn’t have a donut pan yet. I was not about to let this stop me.Thus, I basically put a baked donut recipe into a cupcake pan and called them donut bites. That’s legit, right??

Works for me anyways. And why not add some raspberry jelly while we’re at it? (Erik’s idea!)

Cinnamon & nutmeg jelly donut bites
Inspired by Oh She Glows and Peas and Thank You

Ingredients:

  • 2 cups white whole wheat flour
  • 1 cup coconut sugar (or other sugar of choice such as cane sugar)
  • 3 teaspoons baking powder
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1 cup almond milk
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • Egg replacer for two eggs
  • 1/4 cup coconut oil

Instructions:

  • Preheat oven at 350 degrees.
  • Place all wet ingredients into a small sauce pan and set on stove top on low heat until ingredients combined. This mixture should be just warm to the touch, not too hot.
  • Mix all dry ingredients in a large bowl, and add the wet to the dry until just mixed.
  • Place in cupcake pans and bake for about 15 minutes (makes about 24 small donut bites).
  • Once out of the oven, using a squirt bottle or pastry bag, poke a hole in the middle of each donut bite and fill with as much jelly as desired, and then sprinkle with a little cinnamon and nutmeg. I used raspberry jelly, but any will work!

Note: Feel free to simply squirt jelly on top of these donut bites too, it’s just as delicious! The sprinkle of cinnamon and nutmeg on top really puts these over the top as well and make them smell amazing.

The coconut sugar makes the batter a light brown color, so if you use regular sugar or cane sugar, the color of your batter will probably be lighter.
