Enough weekend foodie recaps … it’s time for a delicious recipe!
Last week was raw blueberry pie, and this week we have …
Raw Apple Pie
This recipe is another definite winner! As with the raw blueberry pie, it’s inspired by Jonsi & Alex and their small, but delicious online raw Good Heart Recipe Cookbook.
You may know Jonsi from Sigur Ros, but he’s doing solo work now that we really like! A Jonsi song to get us all in the raw pie making mood:
Crust:
-- 1 C shredded raw coconut
-- 1 C pecans
-- 1 C dates, pitted
-- 1 Tsp. cinnamon
-- 2 pinches salt
-- 2 Tbsp. peanut butter (the recipe called for almond butter, but I went with peanut)
** Blend or food process all ingredients one at a time until they become very fine, then form into a crust. Flatten it out onto your pie dish, then spread out a thin layer of peanut butter over the crust.
Filling:
-- 2 1/2 apples
-- 1 C dates, pitted
-- 2 Tbsp. agave nectar
-- 1 Tbsp. cinnamon
** Blend or process together until smooth, and pour on top of pie crust. Then blend another 1 1/2 apples very chunky or cut into small bites and slightly mix it into the above filling. Decorate the top, as desired, throw it in the fridge to chill for a couple hours, and you’ve got yourself a delicious raw apple pie!
We thought this pie came out beautifully, and delicious!
Raw pies are especially good in the summer since they’re nice and cold. And since the ingredients are simple, and good for you, it makes for a perfect breakfast, snack or dessert!
